Healthy Snacking

In a bid to live a more health conscious lifestyle I have become a little bit more than obsessed with Kale as of late.

Good for your body and your skin? I can't get enough.

Kale withing a kicking K surely does live up to its name when it comes to health benefits. It is a nutritional powerhouse. Packed full of iron, fiber, vitamins and antioxidants it puts the super in super food.

It is as its nutritional best raw, as the more you cook it the more nutrients it looses. Completely raw I'm nawt gunna lie it does look and taste a bit like hamster food. However toss some lemon or lime over it and let the natural fruit acids wilt it a bit and you get a much better taste without loosing any goodness!

My new favourite way to eat it?
Now I can't take full credit for this, it was a friend of mine who actually recommended I cook it this way, but kale crisps are the way forward.


Simply scatter the kale leaves on a baking tray, drizzle with a little oil and salt and season with your choice of spice, my personal favourite is paprika. Cook in the oven for 10-15 minutes until the leaves turn darker and crispy and voila. Think the texture of ready salted crisps with none of the calories.
To snazz mine up a bit a throw in a handful of mixed nuts and some ham.

Delish. And more importantly guilt free!
